1cup self-rising yellow cornmeal
¾ cup self-rising flour
½ cup milk
1 ½ teaspoons chili powder
2 tablespoons chopped pimientos
2 tablespoons chopped green onions
2 tablespoons bacon drippings
Put bacon drippings in an iron skillet and heat skillet in oven at 400 degrees until hot.
Meanwhile, mix together cornmeal, flour and chili powder. Stir in egg, milk, pimientos and onions. Pour into hot skillet. Return skillet to oven and reduce heat to 350 degrees. Bake 20-25 minutes or until bread is done in the center and lightly browned on top.
